Jonathan Forbes founded Forbes Wild Foods in Toronto, where it supplies wild foods picked in rural and remote communities across Canada, from restaurants and markets to a shop on the Danforth.
Wild blueberries are Canada's best known wild fruit, and these were hand-picked in the northern wilderness and slowly simmered into a compote. Spoon it over pancakes or ice cream, fold it into muffin batter, or reduce it with a little stock as a sauce for roast fowl.
