This semi-firm cheese is made by the monks of the Abbaye Saint-Benoit-du-Lac in Quebec, where they have been making cheese since 1943.
It is soft on the palate with a nutty, lactic flavour. A great table cheese, it is very versatile for sandwiches, melting, or just having with some fruit and crusty bread.
