Woodleigh Farms has been a family farm in Cavan, near Peterborough, Ontario since 1902, and the family has made maple syrup there for over 40 years. They farm regeneratively with cover crops, no-till practices and solar power, and their maple syrup is certified organic.
Dark grade is deeper in colour with a more robust flavour. Use it in baking and barbecue sauces, over yogurt and granola, or stirred into coffee when you want the maple to really come through.
