Enright Cattle Company is a fourth-generation family farm near Tweed, Ontario, where Kara and Daryl raise a small herd of beef cattle and sell directly to homes, butchers and restaurants. Sweetbreads come from the thymus or pancreas of the animal, tender and rich, and are a delicacy in many kitchens.
Saute them in butter, grill them or fry them until golden, and serve with lemon and herbs for guests to gather around.
