First Fish is a Toronto non-profit that partners with Inuit fishermen in Pangnirtung, Nunavut, to bring wild Arctic char from Baffin Island to homes in the south. The char is flash frozen during the winter harvest, and within six hours in summer, so it reaches you as it left the water.
Arctic char is a close relative of salmon and trout, with a milder, more delicate flavour. Thaw overnight in the fridge, then bake, broil or grill it for an easy weeknight dinner, or flake it into a spring salad or autumn chowder. Gather it up with lemon and fresh herbs and supper is done.
