Turbot is a flatfish from the cold waters of the Canadian Arctic, similar to halibut but smaller and more tender, with a richer flavour. Ours is wild caught by Inuit fishermen from Pangnirtung and Qikiqtarjuaq on Baffin Island, Nunavut, then flash frozen (during the winter harvest, and within six hours in summer) and kept frozen until purchased or smoked. This ingredient arrives frozen, ready for your home kitchen.
