Grainstorm Heritage Baking is a family owned workshop in Ontario's Mennonite farm country, where certified organic spelt, kamut and oat kernels are milled slowly between two slabs of Carolina granite, then mixed and vacuum sealed within hours so the fresh-milled flavour is still there when you bake. The Ancient Grain Pancake Mix gives you rich, grainy flavour and a texture that is light yet sturdy, and it works in the waffle iron too.

The batter is thick, so ladle it into the pan and spread it gently before it sets. Serve a stack with Ontario maple syrup, warm apple compote or sliced fall pears, and make a double batch to freeze for school mornings. One bag serves four to eight.
