Garlic is a bulb with cloves that grow around a central stalk, similar to the sections of an orange. Garlic has a sharp, pungent spicy taste that mellows and sweetens when cooked that is excellent for flavouring food. Garlic is a winter annual crop, meaning the cloves are planted in the ground in late fall, before the ground freezes, and are ready for harvest in Ontario in the following summer.
Garlic originates from Central Asia and northeastern Iran. There are many varieties of the garlic Canadians are most familiar with, from the traditional white garlic to red and black coloured garlic varieties. When the plant is harvested early, they are similar to scallions. Garlic is closely related to onions, leeks, shallots, and chives. The cloves can be peeled and pickled for longer storage.
