Green beans are the crunchy, juicy, and flavourful traditional Ontario summer favourite. They are often picked slightly early for a more tender and crunchy bean. Green beans are typically ready for harvest in Ontario in late summer and are bush and sun-ripened.

Green beans have a wide range of ways they can be enjoyed. They can be eaten right from the plant, sauteed, roasted, pickled, blanched, and in casseroles. Blanching the beans allows them to become more tender while keeping their vibrant colour. Green beans also add an excellent crunch in stir-frys and can be canned or frozen to preserve them longer.

There are many different varieties of the common green bean. The varieties can be split into three groups based on how they're grown: bush beans, pole beans, and runner beans. Most varieties now are 'stringless'. Green beans originated in Central and South America and it is believed that they were cultivated in Peru and Mexico for thousands of years.

To keep beans fresh and crisp at home:

  • refrigerate
  • do not wash until ready to use
  • if storing in plastic, wrap in a paper towel first to absorb any extra moisture

We love enjoying our beans sautéed with olive oil (or butter!), garlic, salt and pepper. For a special treat, enjoy your beans sautéed in bacon fat and topped with fresh garlic!
