H.O.P.E. Eco Farms is a cooperative of small farms in the Aylmer Amish community in southwestern Ontario. Their water buffalo are grass fed, and this ghee is clarified from that milk fat, leaving a golden, nutty cooking fat.
Ghee handles high heat well, so it suits roasting root vegetables, frying eggs and sautéing greens. Gather a jar for the fall kitchen, or stir a spoonful into a pot of dal.
