Sage is a fragrant herb with an earthy, citrusy, and pine-like aroma from the dusty-green leaves. Sage used in cooking is also called 'common sage' or 'garden sage', and there are lots of other closely related varieties that are not typically used in cooking. Sage is usually ready for harvest in Ontario in late summer and into the fall.
Sage can be used both dried and fresh and is commonly considered a savoury herb. It can be enjoyed in soups, stews, on meat, and in stuffing. The leaves can also be enjoyed as a tea, or can be distilled into oils and perfumes. Sage keeps much of its flavour when dried, and can be ground or powdered for rubs and seasonings.
Sage, a member of the mint family, originated in the Mediterranean area and has become naturalized all over the world. Sage has been enjoyed in both culinary, medicinal, and aromatic applications since Ancient times, notably by the Romans, Grecians, French, and Chinese.
