Cross Wind Farm in Keene, Ontario, is a goat dairy run by Kevin and Cindy, who have been making cheese from their own goats' milk since 2006. This chèvre is fluffy and spreadable, light and creamy with a mild, buttery tang, brightened by chives and onion.
Spread it on crackers or crusty bread, crumble it over salads, or add it to a cheese board.
