Kara and Daryl Enright farm near Tweed, Ontario, a fourth-generation family raising a small herd of beef cattle and selling directly to homes, butchers and restaurants. This tallow is rendered beef fat, sold frozen in a 454 gram pack.
It has a high smoke point, which makes it a good fat for frying and for flaky pastry. Tallow is also used in soap, balm and candle making. Fry up a batch of potatoes and gather the family.
