Kendal Hills Farm is a 70 acre family farm near Orono, where Dave and Emily raise their chickens on pasture, free to roam by day and roost in the evenings. The birds graze on grubs and insects and are fed non-GMO, non-medicated feed. Each bird is hand-caught and taken to a provincially inspected, family-owned small processor in Omemee.
Chicken hearts are tender, mild and quick to cook. Thread them onto skewers with a garlic and lemon marinade, sear them in a hot pan with butter and herbs, or slice and add to a stir fry.
