Lunar Rhythm Gardens is an organic farm in Janetville, in the Kawartha Lakes, run by a farmer who grew up on this land. She started with 10 rented acres in 2008, sold her first farm shares in 2009, and bought the family farm in 2016, working with draft horses as well as tractors.
Calypso beans, also called Orca or Yin Yang beans, have bold black and white markings and a creamy texture with a mild, earthy flavour. Soak them overnight, then simmer them in soups, stews and salads. They are lovely in a slow-cooked pot on a cool fall day.
