Enright Cattle Company is a fourth-generation family farm near Tweed, Ontario, where Kara and Daryl raise a small herd of beef cattle and dry age their cuts for about 21 days. The outside round comes from the rump and is a great value roast.
It is best roasted low and slow. Season well, roast until just done, rest, then slice thin for a hearty dinner to gather around.
