Springhills is a second-generation family fish business in Hanover, Ontario. This pickerel (walleye) is wild caught by independently owned fishers on Lake Erie, in a fishery certified by the Marine Stewardship Council. Each fillet is individually vacuum sealed, so you can take out just what you need.
Pickerel is a prized whitefish, succulent and sweet, often compared to buttery scallops. Thaw overnight in the fridge, then pan-fry in butter, bake with lemon and breadcrumbs, or make a classic shore-lunch style meal at home with a simple herbed potato salad.
