Springhills, a second-generation family fish business in Hanover, Ontario, makes these burgers from pickerel (walleye) caught by independent fishers on Lake Erie, a wild fishery recognized as sustainable by the Marine Stewardship Council. They are 100% fish with nothing added, so you decide how to season them.
Cook them straight from frozen: pan-fry at medium-high heat for about five minutes a side, or grill them. Try them with a lemon-herb butter, a spicy mayo, or dill and a little yogurt sauce, on a toasted bun or over a bowl of greens. If you want them seasoned and ready to go, try the battered burgers.
