Springhills is a second-generation family fish business in Hanover, Ontario, and this Atlantic salmon comes from Sustainable Blue, a land-based farm in Nova Scotia that raises fish in a similar way to Springhills, with fresh water, low densities and careful diets. Each 2 lb bag holds four vacuum sealed packs of two 4 oz fillets, so it is easy to take out only what you need.
The flavour is mild and rich. Thaw a pack overnight in the fridge, then roast it with maple and mustard, sear it in a hot pan, or flake it into a creamy pasta. A freezer stocked with portions makes weeknight dinners at home simple.
