Woodleigh Farms has been a family farm in Cavan, near Peterborough, Ontario since 1902, and the family has made maple syrup there for over 40 years. They farm regeneratively with cover crops, no-till practices and solar power, and their maple syrup is certified organic.
Amber grade is a medium, middle-of-the-road syrup that works on just about everything. Pour it over pancakes and porridge, roast it onto carrots or sweet potatoes, or use it to sweeten fall baking.
