Ti Kay La
Everything that Chef Victoria Alexander cooks is a reflection of her childhood, growing up in St. Lucia. Chef Victoria grew up in a small house, Ti Kay La, in St. Lucian Creole, in the coastal town of Castries. With just two rooms for fourteen kids along with their roommates, Victoria learned early on to savour the natural riches that surrounded her family's home: the azure sea that supplied the island with fish, and the hot West Indian sun that ripened the avocado, plantains, peppers, and papaya that grew at the doorstep.
Whatever else the family may have lacked, Victoria never ran short of love, kindness of neighbours, and the freshest fruits and vegetables. These are the things that she remembers most about her childhood, and she puts these memories along with some island sunshine into every sauce that she makes.
Chef Victoria has had the pleasure of cooking in some of the top restaurants, hotels, and catering kitchens in both St. Lucia and Toronto. In 2019, Chef Victoria competed on Food Network Canada's Fire Masters. As a trained nutritionist, Chef Victoria's philosophy is to take the freshest, most natural ingredients - mostly local, with a few from St. Lucia - and transform them into something healthy, delicious, packed with flavour, and just hot enough to be exciting.
