Zucchini is a more fibrous version of a cucumber. They tend to have a slightly harder, less juicy interior flesh that is slightly more white and sturdy. Zucchini, a summer squash also known as courgettes, grows on the vine and ripens in mid to late summer in Ontario. These are picked when immature for the best flavour, but can reach up to 1 meter long when left to mature. The larger the zucchini, the thicker the skin, so large zucchinis are best used for baking. Younger Zucchinis are a great addition to a stir-fry, kabob skewer, or soups and stews. They can also be spiralized as a great alternative for gluten-free noodles. Both the fruit and the flowers can be stuffed for a delicious healthy meal.
