H.O.P.E. Eco Farms is an Amish-community cooperative near Aylmer, Ontario, and their grass-fed water buffalo milk is made into cheese in partnership with Gunn's Hill Artisan Cheese in Woodstock. Buffalo Bliss is a soft, surface-ripened cheese, creamy and more flavourful than a typical grocery store brie.
Warm it briefly in the oven and serve with jam and crusty bread, or set it out with fruit and nuts.
