Empire Cheese & Butter Co-op in Campbellford, Ontario, has made cheese since the late 1870s. It is the only cheese plant operating in Northumberland County and is owned by local dairy farmers, who elect a board each year to run the factory. This is their cow's milk mozzarella.
Melt it on homemade pizza, layer it into lasagna, or slice it with tomatoes and basil while they are still in season.
