Gunn's Hill Artisan Cheese in Woodstock, Ontario, is run by Shep Ysselstein and Colleen Bator, who make Swiss-style cheeses from the milk of a family dairy farm in Oxford County. Oxford's Harvest is their mild, creamy, hand-washed rind cow's milk cheese, here made with generous amounts of ghost pepper. The heat is intense and arrives a few moments after the first bite.
Slice it thin for burgers, or melt it into a grilled cheese with a little honey to take the edge off.
