H.O.P.E. Eco Farms is an Amish-community cooperative near Aylmer, Ontario, where the water buffalo graze on grass. Sweetgrass is a 100% grass-fed water buffalo milk cheese, similar to a mild Gouda and aged at least three months. It has a lactic, grassy flavour and aroma.

It is an easy everyday cheese. Slice it for lunchboxes and sandwiches, or cube it onto a board with pickles and apples.
