Carolina's Colombia is run by Ralf Pohlak, a native of Ontario, and Carolina Orduz, who grew up in Bucaramanga. They bring in coffee from Silveria, the family farm named for Carolina's grandmother, where the trees grow on steep, shaded slopes, the cherries are picked by hand, then washed, fermented and sun dried.
The dark roast is roasted in Ontario from those green beans and suits anyone who likes a bold, full cup. Brew it strong for a cold morning, or pour it over ice with a splash of milk when the weather turns warm.
