Springhills, a second-generation family fish business in Hanover, Ontario, makes these bite-sized pieces from pickerel (walleye) caught by independent fishers on Lake Erie, a wild fishery recognized as sustainable by the Marine Stewardship Council. Each bite is about 3 cm across, lightly battered and seasoned.
Cook from frozen in a single layer, flipping halfway: 15 to 18 minutes at 375F in the air fryer, or 21 to 23 minutes at 400F in the oven. Serve with tartar sauce or a squeeze of lemon, tuck them into tacos, or pile them on a platter for game-day snacking at home.
