Kabocha squash is also called Japanese Pumpkin, named for it's country of origin.

It is exceptionally sweet with bright orange flesh and edible skin.

It can be roasted or baked with the skin on, either whole or cut in half with the seeds removed.  If you're roasting it whole, be sure to pierce the rind with a fork in a few places to release the steam as it cooks.
