Chicken Gizzards

The gizzard is the muscle that breaks down the food for a chicken. When chickens graze, they take in sand and grit with their food, which lodges in the gizzard and is necessary for masticating the grass and grain they eat, since they don't have teeth!

These gizzards are cleaned by hand, and are a dark meat organ. Best to cook them low and slow else they can come out very chewy. They are low in fat and highly nutritious, and enjoyed all over the world as street-food!
