Glengarry Fine Cheese in Lancaster, Ontario, was founded by Margaret Peters Morris on her family's farmland, where she began making cheese from the farm's milk in the early 1990s. Their cheeses age in European-designed aging rooms. Celtic Blue is a soft, creamy blue cheese with delicate veining and a limestone-coloured natural rind. The blue flavour is mild rather than aggressive, softened by a buttery aroma.
Crumble it over a fall salad with pears and walnuts, melt it over a steak, or serve it with honey and crusty bread.
