Century Game Park is the Potter family farm near Warkworth in Northumberland County, worked since 1837 and now in its sixth generation. Rod and Elaine Potter raise elk alongside bison on the hills there, one of only a handful of elk farms in Ontario.
Ground elk is lean and high in protein, and it suits the foods of early autumn: chili, meatballs, shepherd's pie or stuffed squash. Cook it gently and add a little fat or stock so it stays tender. Graze on it all season long.
