Known as the salad turnip, these tender roots from Clearwater Farm are sweet, almost fruity, and delightfully crisp eaten raw, sliced into a salad or gathered onto a snack plate with a little salt. The green tops can go into salads too, though their gentle bitterness is best tamed by steaming, or by blitzing them with oil, garlic, and salt into a bright chimichurri.
