Our processor does a great job cleaning the birds, however because of the breed sometimes there are pin feathers that will need to be removed from the skin. This can be done with a set of tweezers, and some people choose to ignore removing them since roasting the bird can also take care of them.
MiniClassic New for 2026, the MiniClassic is our answer for tables that want the same fresh, pasture-raised flavour in a more modest size. Like the Artisan Gold, it's raised outside on pasture and fed a non-GMO diet, giving it the same clean, hearty taste in a bird that's easier to fit in a standard oven and better suited to smaller gatherings.
