Cucumbers such as these are generally known as 'field cucumbers' to differentiate them from English cucumbers. These ones tend to have a thicker skin and more seeds, and are generally larger and thicker around. Field cucumbers are generally ripened on the vine, which is why many will have a slight yellow patch on their skin, where it made contact with the ground while it was growing. They are generally ready for harvest in Ontario from June to early September, depending on the weather and growing season. They ripen faster in warmer weather.

Field cucumbers are can be enjoyed fresh or cubed up into salads and casseroles. They tend to be thicker than other cucumbers and so can be thickly sliced and grilled or roasted on kabobs. These cucumbers are also excellent for stuffing and pickling.

Cucumbers belong to the gourd family. The many cucumber varieties tend to fall into two main groups: slicing and pickling. Pickling cucumbers tend to be shorter and thicker with bumpy skins. Slicing cucumbers tend to be used for salads and every-day eating.
