Lehigh potatoes are round, slightly oval and flattened. They have yellow skin and flesh, and a creamy, dense texture when boiled and mashed. This is a waxy, mid-dry gold potato that is moist when baked and a great all-purpose option. Being a medium, starchy tuber, this potato is a good replacement for Yukon Golds, and suits soups, stews, fries, and chips better than most yellow potatoes.

This variety is named for the Lehigh Valley in Pennsylvania where it was developed from a cross between Keuka Gold and Pike varieties. This variety was released to the commercial market in 2007 by Walter DeJong of Cornell University, Barbara Christ of Penn State, and the University of Maine. The name "Lehigh" is derived from the Lenape term Lechewueki or Lecheuwekink, meaning "where there are forks".
