Norland potatoes are red skinned with white flesh and are not good for baking. Instead, their low specific gravity makes them perfect for boiling, salads, and can be used for fries and chips.
This cultivar was release in 1957 by North Dakota State University, and has since been bred into two more strains: Red Norland by 1965, then Dark Red Norland later, which has become more popular than the original Norland. This variety has been bred to be more adaptable to cooler climates like the Northern United States and Lower Canada.
