Grown organically by Pfennings Farms, these red beets turn tender and mildly sweet with an earthy depth once cooked, and the leafy stalks are edible too, with a flavour similar to Swiss chard. Try grilling them alongside potatoes and carrots, drizzled with olive oil and wrapped in foil. Beets are a good source of manganese, iron, vitamins C and B6, magnesium, and potassium.
