By pre-ordering a bag of potatoes, you're letting us know how many to order from the farm. Once we have the potatoes onsite, we will send them with your next delivery!
Cartier potatoes were developed in Quebec and only granted breeding rights in Canada in February 2026, which makes this a very new variety. This is a small to medium sized round potato with red skin and white flesh.
Potatoes purchased in supermarkets are often treated with chemicals to prevent sprouting (or “eyes”). These potatoes have been harvested in the Fall and are NOT chemically treated and are considered to be alive. When properly stored, sprout growth is minimal, but if sprouting happens, simply remove them and cook as usual! Potatoes that are not stored in a dark, 7-8 degree Celsius place are best enjoyed within 2 weeks.
