Celery is an excellent crunchy snack that is high in water content and fibre. The leaves can also be used as a substitute for flat parsley or any other aromatic herb and taste similar to fennel or anise. They can be sauteed or pureed into soups, stews, and sauces to make delicious, sustainably cooked dishes! Celery is typically ready for harvest in Ontario in late summer.
Celery is believed to originate from the Mediterranean area and has been cultivated for thousands of years. Cultivated celery is descended from wild celery, and the dominate cultivar of in North America is the 'Pascal' variety. Celery is related to celeriac and leaf celery, which have both been bred for different purposes, namely for an abundance of the roots and the leaves respectively.
