Carolina's Colombia is run by Ralf Pohlak, a native of Ontario, and Carolina Orduz, who grew up in Bucaramanga. They bring in coffee from Silveria, the family farm named for Carolina's grandmother, where the trees grow on steep, shaded slopes, the cherries are picked by hand, then washed, fermented and sun dried.
This medium roast is roasted in Ontario from those green beans, a balanced everyday cup for the drip pot, the pour over or a Sunday morning French press.
