Enright Cattle Company is a fourth-generation family farm near Tweed, Ontario, where Kara and Daryl raise a small herd of beef cattle and dry age their cuts for about 21 days. These filet mignon steaks come from the most tender cut of the animal, cut about an inch thick, one to a package.
