Envol potatoes are oval in shape with smooth, light buff skin and white flesh. Their skin is very thin, making them super easy to peel (or can even be left unpeeled). They are a waxy potato that holds its shape well when cooked. This very early season variety has a floury texture that is great for boiling, mashing, and baking.
The Envol cultivar was developed by the Quebec Ministry of Agriculture at Les Buissons Research Centre in Les Buissons, Quebec in 1987.
