Blythe Weber and Adam Smith run Spade and Spoon from their family farm in the rolling hills of Northumberland County, Ontario. They planted their first garden in 2008 and now put up small batches of preserves and ferments, many made with vegetables they grow themselves.

This classic white kraut is wild fermented the traditional way. It is the one to reach for with sausages, pierogi and roast pork, piled onto a Reuben, or stirred into a creamy potato salad for a little tang. Gather a jar for the cheese board too.
