Hedgehog mushrooms are named for the short hanging spines that cover the underside of their caps instead of the gills that you might recognize on it's cousin, the chanterelle. They are also called "sweet tooth" mushrooms because they have a sweet and nutty flavour, with a slightly fruity aroma.
The firm texture makes these wild mushrooms a great meat substitution, and they hold up well to sautee-ing, stewing or even pickling. Their shape also makes them one of the easiest mushrooms to clean and prep for cooking - simply use a small stiff brush to wipe away any dirt or debris.
As with all wild mushrooms - do not eat raw, and enjoy in moderation!
