Empire Cheese & Butter Co-op in Campbellford, Ontario, has made cheese since the late 1870s. It is the only cheese plant operating in Northumberland County and is owned by local dairy farmers, who elect a board each year to run the factory. This is their cheddar with caramelized onion.

Serve it on a board with crackers, or melt it onto toast for a quick supper.
