Dill, also known as 'dillweed', is an excellent fragrant herb useful for many applications. It grows up a central stalk that branches out into smaller, finer stems, and then into needle-like soft, tender leaves (similar to fennel). Dill is ready to harvest in Ontario in mid-summer, just in time to be enjoyed fresh with cucumbers or on bacon and tomato sandwiches! Dill pairs very well with lemon, fish, yogurt, cucumbers, vinegars, and tomatoes. Dill is a primary ingredient in pickling. Dill is best used fresh, but can be dried or frozen for use later on. Dill originates from Eurasia and can be traced back to Ancient Egypt and Ancient Greece. It is a staple herb in eastern European cuisines and is used to give dishes like borscht a sharp fresh taste. Dill likes hot weather and lots of sunshine.
