Harvested the week before, these beans are starting to show some rust. Still good to cook, or to trim and freeze for the winter!
Crunchy, juicy green beans from Ferguson Farm, a classic Ontario summer favourite that's bush-grown, sun-ripened and picked a little early for extra tenderness. Graze on them raw right off the stem, or sauté with olive oil, garlic, salt and pepper; for a special treat, try them cooked in bacon fat and topped with fresh garlic.
To keep them fresh at home, refrigerate and hold off washing until you're ready to use them; if storing in plastic, tuck in a paper towel first to absorb extra moisture.
