Adirondack Blue potatoes have a blue flesh and a purple-tinted skin. This variety was developed by Cornell University in 2003. Adirondack Blue potatoes are ready for harvest in Ontario in late summer and can be stored into the winter.

Adirondack Blue potatoes add a great splash of blue colour to any dish. They can be boiled, baked, added into salads, and made into colourful blue chips! Potatoes purchased in supermarkets are often treated with chemicals to prevent sprouting (or “eyes”). These potatoes have been harvested in the Fall and are NOT chemically treated and are considered to be alive. When properly stored, sprout growth is minimal, but if sprouting happens, simply remove them and cook as usual! Potatoes that are not stored in a dark, 7-8 degree Celsius place are best enjoyed within 2 weeks.
