Alliston is a white potato variety that is round to oval in shape, has smooth skin, white flesh, and matures early. It is quite tasty, with a starch content similar to Yukon Golds, which makes them quite suitable for any type of cooking, from mashing to roasting to frying. 

White potatoes generally have a slightly creamy and dense texture and tend to have low sugar content and a mild, subtly sweet flavor. White potatoes hold their shape well after cooking and are best for mashing, salads, steaming, boiling and frying.

Officially registered in July of 2019, the Alliston potato (yes, named after the potato capital of Ontario) was developed by Quebec potato breeder Andre Gagnon, President of Progest 2021 based out of Sainte-Croix, Quebec. It was bred to be resistant to common scab, the most common potato disease in Ontario. It took about a decade to develop this variety, with AC Chaleur as the main parent cultivar.
